Silver Fork Lodge [“Forking Brilliant,” Aug. 4, City Weekly] in Big Cottonwood Canyon, I wanted to bring to your attention a recent Salt Lake Valley Health Department routine inspection that showed a high number of violations for the lodge. While the lodge has since taken care of nearly all the violations, I’m still concerned that adding an extra patio and such is just going to prolong people’s waits and place more stress on its kitchen, resulting in sloppier food and longer wait times.

But don’t get me wrong, [owner] Dan Knopp’s a great guy; let’s just hope no one with a clue realizes what a goldmine location he has and actually builds a well-run establishment with the means to cater to the summer masses and not be just a greedy proprietor.
