New Downtown Bistro
Pallet Bistro (and yes, it’s “pallet,” not “palate” or “palette”) is now open at 237 S. 400 West in the restored brick building that used to house Big City Soup. The name Pallet pays homage to the restaurant’s roots; for many years, it served as a busy loading dock for the Salt Lake Valley’s first creamery. I’m told that the chef-inspired menu is “elegant and simple,” with an emphasis on casual fine dining and dishes such as sweet-beet salad with goat-cheese mousse and braised short ribs on horseradish-parsnip purée. The restaurant looks like a warm, cozy bistro you’d find in New York’s Greenwich Village. Pallet is open for both lunch and dinner. There is also a patio and plans to offer brunch by summer. Stay tuned for future reports. For reservations, call 801-935-4431 or visit EatPallet.com.

Cut the Fat @ Oasis
Executive chef Billy Sotelo is inviting Oasis Cafe (151 S. 500 East) guests to “cut out the fat,” as he introduces a new three-course healthy dinner menu, priced at just $25 per person. Changing weekly to take opportunity of fresh ingredients, the nightly dinner special includes a choice of soup or salad, a selection of chef’s choices of entree, and dessert. Sotelo’s entree selection is usually fresh fish or a low-fat, locally ranched, organic chicken option. “Chef Sotelo and his culinary team take pride in hand-crafting every item using the freshest ingredients possible, wanting guests to feel full, but also refreshed,” says Oasis general manager Will Keesen. More to Sea at Tucanos
The annual seafood festival is on at Tucanos Brazilian-style churrascaria. During the festival, freshly grilled tilapia, salmon and other tasty offerings are available at no additional cost to Churrasco & Salad Festival meals. Diners can also add a grilled shrimp skewer, bacon-wrapped giant scallop or a whole 12-ounce lobster tail (steamed and served with drawn butter) for an additional charge. For reservations at The Gateway Tucanos location, call 801-456-2550 or visit Tucanos.com.
