SuAn Chow, owner of Salt Lake's popular Chow Truck, announced that she will be working with a local guest chef each month to create a Chow Truck Taco of the Month. --- For April, she's teamed up with The Copper Onion's Ryan Lowder, who created a tasty-sounding spring pork belly taco.
It's a combination of ginger-marinated carrots, scallions, mint, cilantro, jalapeno and Snake River Farm pork belly, sprinkled with sesame seeds. Priced at $5, the pork belly taco will be available throughout April. Lowder is also serving the spring pork belly as a salad at The Copper Onion.
Says SuAn about the guest chef taco program, "We have so many talented chefs and great restaurants in Salt Lake these days, and there’s so much growth in local specialty foods, I thought it would be fun and refreshing to feature a different one each month."
Upcoming guest chefs include Michael Richey of Pago, Takashi Gibo of Takashi, Viet Pham of Forage, and Romina Rasmussen of Les Madeleines.
