Taste your way through Spain's most notable cheese making regions. Each cheese has been carefully selected by our ACS (American Cheese Society) Certified Cheese Professional, Matt Caputo. This certification is indeed the highest standard for cheese professionals available in the U.S. You will learn the story behind each selected cheese, review basic production techniques, explore the cheese from a geographical and terroir perspective, and - ultimately - taste a wide array of cheeses, nothing their varying textures and distinct flavors along the way. We're also very lucky and pleased to announce our wine education for this class will be presented by Rick Longoria of Longoria Wines. A pioneer of pinot noir in California and master of old vine Spanish grape varietals, Rick will have the personal experience and knowledge to expertly pair our fantastic Spanish cheeses with his very own wines.
