On Thursday, March 12th,
Finca restaurant will host an unusual wine pairing dinner: one featuring 100 percent sparkling wines from Spain.
The wines are from one of the original
Cava producers in Spain: Raventós i Blanc winery, with winemaker Pepe Raventós in attendance. Executive Chef Phelix Gardner, Chef de Cuisine Dallas Olson and Sous Chef Carter Light and their team are offering a special multi-course menu to pair with the sparkling wines from Raventós.
The Raventós family has over 500 years of winemaking history in Spain's Catalonia region, dating back to 1497. As the oldest documented winery in Spain belonging to the same family, they have worked and farmed the same 220 acres for generations, including their ancestor Josep Raventós Fatjó. In 1872 he created the first sparkling wine in Spain using the traditional method, which would one day come to be known as
Cava. Since then, every generation has dedicated itself to tending the vineyards and to making the finest sparkling wines possible, always using the native grapes of the region.
Pepe Raventós, the current owner and wine maker at Raventós i Blanc, will guide Finca guests through three sparkling wines he has designated from a new appellation called Conca del Riu Anoia: the 2012 D’ Nit Rose, the 2012 L’ Hereu Brut, and the 2009 De la Finca.
The evening's menu and wine pairings include:
Bunuelo de patata with caviar, creme fraiche, lemon, dill + Raventós De Nit Rose, 2012
Esparragos with jamon, salsa verde, poached eggs, fermented persimmon + Raventós L'Hereu Brut, 2012
Arroz a la plancha with mushrooms, lamb belly, basil snails, shiso, snap peas + Raventós Gran Reserva de La Finca, 2009
Tarta de Queso with Loenora cheese, pickled strawberries, oregano + Raventós De Nit Rose 2012
The tasting menu is $40 for food and $45 for wine pairings + gratuity. There is limited space available for this special event, so please email jana@fincaslc.com to make reservations.
